Quick appetizers for summer parties

Summer entertaining is all about fun, whether you’re hanging out around the pool with friends or relaxing on the front porch with neighbors. That’s why we’re always on the look-out for easy summer appetizers. Here are some of our favorites to serve with a great bottle of wine!

Gift-wrapped Brie: Everybody loves Brie, but this yummy French cheese tastes even better if you wrap it in a sheet of thawed puff pastry and bake it just until the pastry is golden and the cheese has started to soften. You can make it even tastier by spreading honey, jam or chutney over the top of the wheel of Brie before you wrap it up. Serve with a selection of crackers and baguette slices.

Prosciutto-wrapped shrimp: Peel and devein large shrimp, then wrap them with strips of prosciutto before threading on skewers. Grill until the shrimp are cooked through and the prosciutto is crispy. Serve alone or with a selection of sweet or savory dipping sauces.

Saucy meatballs: We love mini meatballs, but who has time to make them from scratch? Instead, we like to purchase a bag of frozen cooked meatballs, combine them in a baking dish with our favorite barbecue sauce and then pop them in the oven until the meatballs are heated and the sauce is bubbling. Set out some toothpicks for serving and you’re all set!

Devilish deviled eggs: A perennial summertime favorite, deviled eggs can be jazzed up in no time at all. Try adding some heat – and color – to the yolk filling by seasoning with a spoonful of chipotles in adobo or Sriracha sauce in addition to mayonnaise. Yummy!
