The hills are green, flowers in bloom – not to mention it’s a 3-day weekend! Whether you’re escaping to the great outdoors or simply getting away on a day-trip, what better way to take in the beautiful scenery than with a good ol’ picnic? Add some fun company to a great destination, and prepare to turn a regular afternoon into a memorable one!
Curried Chicken Salad Sandwich
Serving size: 10 sandwiches
3 oz. Extra‐virgin olive oil
2 lbs. Boneless skinless chicken breasts
Salt and freshly ground black pepper
1 ½ c. Mayonnaise
½ c. Major Grey Chutney
1 tbsp. and 2 tsp. Curry powder
1 Lemon, juiced
1/2 c. Sliced almonds, toasted
1/4 c. Raisins
Preheat oven to 400°F
Heat oil in a large ovenproof skillet over medium‐high heat until smoking. Sprinkle the chicken breasts on both sides with salt and pepper. Put chicken breasts in pan in a single layer and brown them for approximately 2 minutes on each side. Put the skillet in the oven and roast until the chicken is just cooked through, about 15 minutes. Remove from the oven and cool.
Chop the cooled chicken and put into a large bowl. Add the rest of the ingredients and toss. Season with salt and pepper. Slice croissants horizontally and spread with the curried chicken. Wrap in plastic wrap.

Throw some salami, Swiss or Muenster cheese and crackers together in a backpack with a bag of Bing cherries. Paired with Merlot, you have a quick-and-easy picnic favorite. Quick tip: Cut cheese beforehand so there’s no need to bring a knife or cutting board.
